Cooking Instructions
--- Excellent on the Smoker
Hickory wood is the best, it gives the best flavor
Slow smoke at 275 to 300 degrees for 2 to 3 hours
Internal temperature should be 170 degrees when done
--- Gas Grill or Open Pit
Cook indirectly form the fire, slowly with frequent turning.
Close the lid for small periods, checking often for flare ups.
Cooking time will vary depending upon the pit and fire.
Usually 1 1/2 to 2 hours.
---Oven Baking
Bake at 350 degrees in a covered pan for 1 hour
Uncover for last 15 minutes

Preheat oven to 350 degrees
Place in a roasting pan that has a lid
A raised rack in pan is suggested
Bake for 5 hours covered
Note: Bird must be thawed completely, 2 to 3 days in refrigerator
